Korean Bulgogi Bowls

I decided to post some new recipes for meals that our family has been enjoying in recent months. I also want to clean up some earlier recipe posts and tag them all properly so that anyone (meaning Mimi) who wants an idea for what to make for dinner can easily see what I like to make. Just when I was undecided about renewing my website, Mimi told me at a soccer game this fall that she still references recipes on here and sometimes sends the links to friends. I have a dozen recipes I want to share so this should keep me posting once a month for a year.

At the top of the list of favorite new meals is this recipe for Korean Bulgogi Bowls. Our friends Claire and J made this meal for our family one time when they invited us over for dinner and we loved it! I make it often and we are not tired of it yet. Cash says it’s in his Top 5 meals I make.

The pluses: It’s easy to prep all the toppings in advance and then when it’s time to make dinner, the rest of the recipe goes very fast. Topping bars are fun, and everybody can build their bowl how they want it. Plussssss…..there’s always enough of the meal left for Cash to take leftovers for lunch the next day (or two).

See how those mushrooms cook down! I used three 8-oz containers of mushrooms the most recent time I made these bowls. That was a lot of mushrooms to slice but worth it.
