I learned from The Wellness Mama about making elderberry syrup. I've been making it on an ongoing basis for probably a year and a half. I feel like it works, which is to say I like to have something on hand to give my kids, both proactively and reactively, to prevent and/or shorten sickness in our home.
Quinoa Salad with Roasted Beets, Chickpeas, Spinach, & Orange
I excitedly planted an entire row of beets in our garden this year. After waiting ten weeks, I recently harvested a few of them to check on their size and realized I have a row of tiny beets. Maybe it's because I failed to thin them properly when they began sprouting from the ground, thus not leaving adequate room for them to grow larger.

That quote came into my head this week as I noticed, yet again, that the bananas I bought were all turning speckled in their overripeness. I keep buying bananas even though my family keeps not eating them. It just feels like I should buy bananas because I've always bought bananas.
Spinach-Quinoa Salad with Cherries and Almonds
I used to wait for cherry season to make this recipe. But then I decided to buy a bag of dried Montmorency cherries from Costco, and the wait was over. I'm happy to see fresh cherries arriving in the stores now that it's spring, so I'll make the salad the "real" way next time. The kids prefer that, but I should have them help me pit all the cherries sometime and see if they think the trouble is worth the taste.
