Question 6: What is your favorite meal to make and eat?
That is an easy one. I have been wanting to post this recipe to my blog for a while, so thank you for asking! My favorite thing to make and eat for the past year has been Cozy Autumn Soup.
My friend Natalie made this meal for our family one time last fall when we went to their house for dinner, and I have been hooked ever since. I don't care that it’s called “autumn” soup because to me it is year round soup. I have been making it once every two to three weeks lately and I know that will continue or pick up as the weather cools off for fall.
TJ and Cash both love the soup as well. I take advantage of Cozy Autumn Soup nights to have Bauer and the girls eat up other leftovers. I honestly don’t mind only half our family eating it because I like to have leftovers and I always do my best to share a jar with Natalie. It gives us an ongoing excuse to meet and trade protein balls for soup.
I always store the leftover soup in jars. When I reheat the leftovers, I add more broth and more handfuls of kale. When I say I add kale, I mean, I ADD KALE!
If you don’t know this about me already, no matter what we have for dinner, I almost always roast some other veggies for myself to have a full plate on the side. All summer, I kept zucchini and yellow squash in the rotation. Now I’ve switched to roasting acorn squash. Sometimes I do cauliflower and broccoli or okra or a medley of Brussels sprouts, cauliflower, and red onion. But whatever the roasted veggies are, I love them with my Cozy Autumn Soup and salad.
