Tofu Stir-Fry
Happy December! Happy Advent! Happy Apple Replay Month!
I have another recipe to tell you about, and though I’ve been making it for years, I took a long hiatus from this meal and only recently brought it back. It has quickly become another of Cash’s Top Five Favorite Meals.
But first, I want to talk about two other things. First, my dear friend Kathryn gave me a Happy Advent present last night when I went to hang out with her at her house after her kids were in bed. I had never thought of giving Advent presents, but it felt meaningful and celebratory to be given a bunch of surprises in a Trader Joe’s canvas tote bag from this friend who is truly one of the best gift-givers I know. I was not expecting any gifts, other than time with Kathryn, whose company and conversation I thoroughly enjoy. So to leave with a bag full of gifts was an unexpected and amazing bonus, in and of itself, but then to see the gifts she had curated particularly for me made me feel so loved. I won’t show you the gifts just yet because one of the items is something I’m going to rebuy for another friend who might read this post. But just look at this kitchen towel for a taste of the good things I got.

The second thing I want to tell you is that I am very happy about my Apple Music Replay for 2024 so far. Oh how I still love Taylor Swift. I wouldn’t want this list to look any other way.
Now let’s talk about tofu. I love this meal as much as Cash does. I love lots of things mixed together in a bowl, especially when the mixture of ingredients is heavy on the veggies like this recipe is. You can switch out the veggies for others such as baby bok choy, tomatoes, cabbage, parsnips, cauliflower, or any color bell peppers.
When I make this meal, I try to make a lot of it at once so there will be leftovers for Cash to take for school for a couple days. Another reason I make a lot is because I eat big dinners and want to load those veggies and tofu cubes with a heavy hand into my bowl (with just a little rice). If you’re making this for a smaller family or for people who eat smaller meals, you could easily halve the recipe and use just one cast iron skillet instead of two. The recipe as I make it calls for three 1-lb blocks of tofu. If halving the recipe, you’ll have to choose whether to use just one block of tofu or two. Or you could look for packages of tofu smaller than a pound each.
